“If you’re Asian American or from the motherland [Thailand] or from down south or up north, I feel something in common with you,” he said.

Sartyoungkul’s experiences shape how he cooks and how he leads. As executive chef for Elon Dining, he focuses on creating meals that people recognize, enjoy and feel comfortable choosing.

“I love seeing people enjoy my food,” he said.

Noppanit “Meena” Monaghan shares the same excitement for creating an enjoyable meal. As chef de partie, she prepares meals at the international station in Lakeside Dining Hall. She is also Sartyoungkul’s mother and, together, they focus on getting the details right, from how a dish is prepared to how it lands with the people eating it.

“I work with students every day who are trying to make Elon a home away from home,” Monaghan said. “It’s important I try everything that goes out to make sure it is 100 percent right.”

That attention to detail often means learning dishes that are new to them. Sartyoungkul said they spend time researching recipes, studying techniques and planning menus to authentically reflect the food where students come from.

For Monaghan, that care shows up in small, specific moments.

“I made arepas for a student from Colombia and she loved it,” she said.

For Sartyoungkul, those moments explain why the work matters. A single meal can help one student feel familiar while introducing others to something new.

“Many international students miss the food from home,” he said. “Providing familiar tastes helps students feel seen, valued and more at ease in their campus environment.”

That belief carries into how he works with student groups across campus. During Asian and Pacific Islander Heritage Month, Sartyoungkul partnered with the Asian Pacific Student Association to plan dining hall takeovers featuring Malaysian, Chinese and Japanese cuisines. Students identified the cuisines and worked with him to shape the menus.

For him, the process is as important as the food itself. It ensures the meals reflect what students want to see and what they want to share with others.

“I don’t want anyone to feel left out,” he said. “Whether you’re vegan, from another country, have dietary preferences or religious needs or an allergy, we want to make sure there are options for everybody.”

That sense of care is rooted in family. Sartyoungkul describes himself as a third-generation chef who learned alongside his mother in the kitchen.

“Mom beats me at Asian foods, especially with her great stir fries and Thai noodle dishes,” he said. “However, I am trained on European cuisine and steaks, so I have her beat there.”

Still, there are moments when their strengths meet in the middle. Those moments often bring people together.

At Elon’s annual holiday party for employees, Monaghan manages a shrimp and grits station that regularly draws long lines of guests waiting for a plate. The dish reflects both comfort and confidence, with attention paid to technique as well as familiarity.

For Monaghan, the setting may change. The standards do not.

At work, their relationship is grounded in respect. They understand their roles and trust each other’s strengths.

“My mother and I are very close,” Sartyoungkul said. “While she is my mother, I am also her campus executive chef, and we both clearly understand and respect those roles.”

For Monaghan, the work always comes back to the people she serves each day.

“I work to make students smile,” she said.

Together, Sartyoungkul and Monaghan prepare food that reflects a wide range of cultures. Their work is guided by care, connection and a desire to help others feel at home, one plate at a time.

Elon honors Asian & Pacific Island Heritage Month

As part of Asian and Pacific Islander Heritage Month, 51 is sharing stories through Today at Elon that highlight Asian and Pacific Islander students, faculty and staff who contribute to a campus environment where cultural identities and experiences are celebrated year-round. Campus safety

As a reminder, several 24/7 services are available throughout this time.

Residence halls and university apartments

  • Residence halls (not apartments) close at 10 a.m. on Saturday, March 21. Student staff will be entering all spaces during closing to complete closing room checks.

Secure your residence

Whether you live on-campus or off-campus, make sure you secure your room, apartment or house.  Other important steps to take before you leave:

  • Unplug all appliances
  • Hide or relocate valuables and move expensive items away from windows
  • Secure any non-perishable food in airtight containers or cabinets; discard any perishable food from your refrigerator
  • Empty all trash; if you live off campus, secure your trash and recycling containers
  • Check all water faucets to make sure they are completely off
  • Set your thermostat for 50-55 degrees
  • If you have a hidden spare key outside of your residence, make sure you remove it
  • Make sure all doors and windows are shut and locked

Students residing in off-campus residences may want to request a Vacation Home Check, a service provided by the Town of Elon Police – .

Parking & Transportation

If you are planning on leaving your vehicle on campus during Spring Break, you may leave it in your permitted lot or you may park it in the South Campus lots or the Innovation Quad lot. FY permits must remain in the FY permitted lots. Make sure your vehicle is locked and you take any valuables with you.

Elon Express and Campus Transportation

  • All Elon Express routes will stop service at the end of shifts on Friday, March 20. Elon Express will resume their normal schedule on Monday, March 30.
  • A modified Elon Express route from Gateway Parking Lot to Inman will run on Sunday, March 29, from 3 p.m. – 9 p.m.

“Our dining philosophy is rooted in the belief that food should nourish, energize and support long-term health, while celebrating flavor, culture and sustainability,” said Mary Thorton, founder and president of Harvest Table Culinary Group. “By supporting the HealthEU Center, we can continue advancing these values and create meaningful experiences that promote well-being.”

In recognition of the company’s gift, the demonstration kitchen and adjoining classroom on the third floor of the HealthEU Center will be named the Harvest Table Culinary Group Classroom and Kitchen. Teaching Kitchens encourage faculty, staff and student organizations to partner with Elon Dining’s chefs and dietitian to create enriching learning experiences while learning valuable skills concerning healthy eating and meal preparation.

“The Teaching Kitchen program we co-developed with 51 is a hallmark of the Elon Dining experience and a source of great pride for us,” Thorton said. “Having a dedicated space within the HealthEU Center to host teaching kitchens will be transformative for this program.”

Harvest Table Culinary Group provides for the entire campus community. The company focuses on chef-driven, authentic and locally sourced food that emphasizes clean ingredients, community connection and well-being through partnerships with local farms and chefs.

“51 is a founding partner of Harvest Table Culinary Group, and we are thrilled to have a long-term, collaborative relationship,” Thorton said. “Our shared values—student-centered learning, global engagement and experiential education—make this partnership truly special. We are deeply committed to the success of the Boldly Elon (strategic plan) and proud to support the university in every way possible.”

Construction continues on the HealthEU Center, which is expected to open in fall 2026.

The HealthEU Center is a central component of Boldly Elon and the university’s broader HealthEU initiative that focuses on six dimensions of health and wellness: community, emotional, purpose, financial, physical and social. The three-story center will feature new classrooms, student-faculty research spaces, multiple floors for wellness and fitness activities, and the Mark and Kim Tyson Counseling Center, which will provide individual and group therapy, as well as workshops and outreach programs.

Currently under construction, the center is located within Elon’s Innovation Quad, home to the university’s engineering and other STEM programs, and scheduled to open in Fall 2026. Elon has set a $25 million fundraising goal to make the HealthEU Center a reality. To date, donors have contributed $23 million to the project.

    Auxiliary Services at Elon is raising the bar for professional excellence through the achievements of Carrie Ryan, assistant vice president for auxiliary services, and Chad Conville, director of auxiliary services. Both recently earned the Certified Auxiliary Services Professional (CASP) credential from the National Association of College Auxiliary Services.

    For Ryan and Conville, the certification recognizes years of experience and a commitment to continuous learning.

    “Earning the certification was a great way to challenge myself and measure my experience and abilities gained over nearly 18 years in Auxiliary Services,” Conville said.

    “With 23 years in higher education, earning the CASP designation is a meaningful milestone,” said Ryan. “CASP is the premier certification in our field, recognizing expertise in operational

    Ryan said the certification process deepened her understanding of campus operations and strengthened relationships that shape Elon’s student experience.

    Since earning the credential, she has developed a departmental vision grounded in the theme “One Team, One Purpose,” while also adopting five value pillars for Auxiliary Services: excellence, connection, progress, pride and leadership. These new values guide and align Auxiliary Services to the university strategic plan and strengthen partnerships with athletics, admissions, student life, Loy Farm and more.

Several campus services will have adjusted hours during the Winter Break or may be closed.

    Please note that University offices are closed Dec. 20-28, 2025, for weekends and an employee holiday break, and Jan. 1, 2026, for the New Year’s Holiday. The University will be open Dec. 29-31 and Jan. 2 as we prepare for the start of Winter Term the following week.

    Campus safety

    As a reminder, several 24/7 services are available throughout this time.

    • Campus Safety & Police can be reached at 336-278-5555. They can also assist with connections to the Student Life on-call administrators.
    • On-call crisis counselors are available at 336-278-2222.
    • SAFEline is available at 336-278-3333 for confidential support with identity-based bias, sexual violence, or interpersonal violence – they can also be a confidential resource to access on-call violence responders.

    Residential information

    Residence halls and university apartments

    • Residence halls (not apartments) close at 10 a.m. on Saturday, December 13. Student staff will conduct modified health and safety inspections to ensure the safety of the halls during this extended break period.
    • Students in university apartments who are not returning for winter and spring terms must move out by Sunday, Dec. 14 at 10 a.m.
    • Information about requests to stay late or return early can be found on the Break Housing page of the Residence Life website.
    • Residence Life offices remain open during the break during regular weekday business hours, except when university offices are closed.

    Off-campus residents

    • Remember that your water bill will be due on Sunday, Dec. 21, and Wednesday, Jan. 21, 2026. Utility bills can now be paid using the . Learn more about your payment options on the .
    • Students residing in off-campus residences may request a Vacation Home Check, a service provided by the Town of Elon Police – complete the .

    Secure your residence

    Whether you live on-campus or off-campus, make sure you secure your room, apartment or house. Other important steps to take before you leave:

    • Unplug all appliances
    • Hide or relocate valuables and move expensive items away from windows
    • Secure any electric transportation devices, such as scooters, outside on a bike rack
    • Secure any non-perishable food in airtight containers or cabinets; discard any perishable food from your refrigerator
    • Empty all trash; if you live off campus, secure your trash and recycling containers
    • Check all water faucets to make sure they are completely off
    • Set your thermostat to 50-55 degrees
    • If you have a hidden spare key outside of your off-campus residence, make sure you remove it
    • Make sure all doors and windows are shut and locked

    Parking & transportation

    • If you plan to leave your vehicle on campus during Winter Break, you may leave it in your permitted lot or park it in the Innovation Quad lot, Historic Neighborhood lot, or the lot on the south side of the Health Center on south campus.
    • Make sure your vehicle is locked, and you take any valuables with you.
    • All Elon Express routes will stop service at the end of shifts on Friday, Dec. 12 and will resume their schedule on Monday, Jan. 5, 2026.

      • Park in approved alternate lots before returning to permitted spaces by 7 a.m. Monday, Dec. 1.

    • Please make sure your vehicle is locked and you take any valuables with you.
